A one-pot from Brazil's northeast where the rice and the beans cook together instead of side by side, with squeaky cheese stirred through at the end so it softens without melting away. Cheap, filling, and on the table in about forty minutes.

Put the black-eyed beans in a saucepan, cover with plenty of water and simmer 30-35 minutes until tender but not collapsing. They are the one pulse that cooks from dry without soaking, which is why this dish exists. Drain, and keep 200 ml of the cooking water.

In a wide heavy pot, fry the bacon in the oil until the edges crisp. Add the onion and cook until soft and golden, then the garlic for a minute more.

Stir the rinsed rice through the bacon and onion until every grain is coated and glossy. Pour in the stock and the reserved bean water, season with salt, bring to the boil, then cover and cook on the lowest heat for 15 minutes without lifting the lid.

Take the lid off, fork the drained beans through, put the lid back and leave it off the heat for 5 minutes to finish steaming.

Fry the haloumi cubes in a dry hot pan until golden on two or three sides, then fold them through the rice along with the coriander and spring onion. Fold gently and late — the cheese should stay in recognisable pieces, not disappear into the rice.
