A proper Vietnamese breakfast baguette: crackly bread spread with pork pate, filled with runny fried eggs, quick pickled carrot and daikon, cucumber, coriander and fresh chilli, finished with a hit of soy and Maggi seasoning. Built around eggs and pate so it lands over 26 g protein a serve.

In a medium bowl, stir the rice vinegar, caster sugar and salt with 60 ml warm water until the sugar dissolves.
stir until dissolved
Add the julienned carrot and daikon, press them under the brine and leave to sit for at least 15 minutes while you get on with everything else. Drain well before using.
15 min minimum
Heat the oven to 180°C. Pop the baguettes in for 4–5 minutes to crisp the crust, then split them lengthways, leaving a hinge. Spread the cut sides with softened butter, then a generous layer of pork pate.
180°C, 4–5 min
Put a large non-stick frying pan over medium-high heat and add the oil. Let it get properly hot so the egg whites crisp at the edges.
medium-high heat
Crack in the eggs, three per baguette, working in batches if needed. Fry sunny-side up for 2–3 minutes until the whites are set and lacy but the yolks stay runny. Season with a little of the Maggi seasoning as they cook.
2–3 min, runny yolks
Lay the fried eggs onto the pate-spread baguettes. Top with drained pickled carrot and daikon, cucumber batons, coriander and sliced chilli. Finish with a drizzle of the remaining Maggi seasoning, close up and serve straight away while the yolks are hot.
