Add the rinsed basmati and water to a saucepan with a pinch of salt. Bring to the boil, then cover, drop to low and cook 12 minutes. Turn off the heat and let it steam, lid on, for 10 minutes before fluffing with a fork.

Heat the coconut oil in a wide, deep frying pan over medium heat. Add the onion and cook 6-8 minutes until soft and pale gold. Stir in the ginger, garlic, green chillies and curry leaves and fry 2 minutes until fragrant.

Stir in the remaining 1/2 tsp turmeric and cook 30 seconds. Pour in the coconut milk and water, add a good pinch of salt and bring to a gentle simmer. Let it bubble softly for 3-4 minutes to come together.

Slip the fish chunks into the simmering sauce in a single layer, tuck in the tomato wedges, and spoon a little sauce over the top. Cover and poach gently for 6-8 minutes until the fish is just cooked and flakes easily. Don't stir hard or it will break up.
