Inspired by a recipe from Love and Lemons ↗
About 135 kcal a serve — 4 g protein, 12 g carbs, 8 g fat. Each segment is that macro's share of the calories, within about 10%.

In a large bowl, place the oats, peanut butter, flaxseed, honey, vanilla, chocolate chips, peanuts and coconut. If your peanut butter is unsalted, add a pinch of salt too. Mix well to combine — the mixture will be thick.
If the mixture feels too dry to come together, add water 1/2 teaspoon at a time until it holds together when pinched.
Use a 2-tablespoon cookie scoop to portion out the oat mixture, then use your hands to roll each portion into a ball.
Place the balls on a large plate or baking sheet and chill in the fridge for 1 to 2 hours, or until firm.
The energy bites keep well in an airtight container in the fridge for up to a week, and they freeze well for up to 3 months.
