Bring the butter to room temperature. Soak the chia seeds in 2 tsp water for 10 minutes to plump into a gel.
With electric beaters, cream the butter and coconut sugar. Beat in the peanut butter and the chia gel.
Add the flour, baking powder and cacao; mix until a dough forms. Roll into a log, wrap in cling film and chill for 20–30 minutes.
Preheat the oven to 180°C and line baking trays. Slice the log into 10 even discs and space them out on the trays.
Bake for 10–15 minutes until golden. Cool a few minutes on the tray, then move to a rack.

about 25 kcal less a serve, all swaps taken
These are already fairly sensible cookies (wholemeal flour, chia, coconut sugar), so the savings come mainly from trimming the fat and sugar. Expect a slightly drier, less rich and marginally less sweet cookie — still tasty, but not quite as short and buttery. Don't cut the fat any further than below or they'll turn…
0.25 cup Butter → 2 tbsp butter plus 2 tbsp unsweetened apple puree (applesauce)
Halves the butter and replaces the rest with fruit puree. Cuts a fair bit of fat, but the cookies will be a touch cakier and less crisp/short than the all-butter version.
0.333 cup Coconut sugar → 0.25 cup coconut sugar
A modest sugar reduction. Slightly less sweet and a little less spread/chew, but still holds together thanks to the peanut butter.
0.25 cup Peanut butter → 3 tbsp peanut butter (natural, no added sugar/oil)
Trims the richest component slightly and avoids any added oils/sugar. Marginally less intense peanut flavour and a touch drier.
