Cover the dates with boiling water and leave 15 minutes until completely soft, then drain them well.

Warm the coconut milk, then blend it with the drained dates, vanilla, cinnamon and salt for a full two minutes — longer than feels necessary. Anything less and it stays grainy rather than glossy, which is the one thing that separates this from mashed dates.

Pour it into a small pan and cook over low heat for 8 minutes, stirring, until it darkens a shade and thickens to the consistency of a thick caramel. It sets firmer again in the fridge, so stop while it still moves.

250 ml coconut milk (full fat) → 200 ml light coconut milk plus 50 ml hot water
Cuts a big chunk of the fat. The spread will be less silky and rich, and slightly less glossy, so you may need to blend longer to keep it smooth.
400 g medjool dates (pitted) → 320 g medjool dates plus 80 ml extra warm water to loosen

250 ml coconut milk (full fat) → 150 ml light coconut milk plus 100 g plain low-fat yoghurt (stirred in after blending, if…
An alternative to the first swap: yoghurt adds creaminess with far less fat and a mild tang. Only works for a cold spread, not for cooking, and gives a slightly less caramel-pure flavour.
