The brigadeiro without the tin of condensed milk: dates and cashews blitzed with cocoa into a fudgy paste, rolled and coated. It is not pretending to be the original — it is its own thing, and it takes ten minutes.

About 162 kcal a serve — 3 g protein, 22 g carbs, 7 g fat. Each segment is that macro's share of the calories, within about 10%.

Blitz the cashews alone to a coarse meal first. Doing the nuts before the dates go in is what stops you ending up with whole cashew chunks in a date paste.
3 min
Add the dates, cocoa, coconut oil, vanilla and salt and run the machine until it comes together into a thick dark paste that holds its shape when you squeeze it. If it stays crumbly, one more date usually fixes it.
5 min
Refrigerate the paste for 30 minutes. Rolling it warm is sticky and miserable; rolling it cold takes two minutes.
30 min
Roll teaspoons into balls and turn them through desiccated coconut or a little extra cocoa. Makes about 24 — two each.

Want it lighter?
about 40 kcal less a serve, all swaps taken
This is already a wholefood dessert, so the biggest levers are the naturally sugar-dense dates and the fat-rich cashews and coconut oil. Small swaps to each pull the calories down, but expect a slightly less fudgy, less rich, and a touch less sweet result — the dates are doing most of the binding and sweetening work…
300 g medjool dates → 220 g medjool dates plus 80 g cooked/mashed pumpkin or unsweetened apple puree
Swapping a third of the dates for a low-sugar puree cuts sugar and calories noticeably. Trade-off: less sweet and slightly softer, so chill well before rolling and the truffles will be a little more…
100 g cashews → 60 g cashews
Cutting the cashews by 40 g removes a chunk of fat while keeping enough body. Trade-off: less creamy and rich; you may need a splash of water to keep the paste smooth.
1 tbsp coconut oil → omit, or use 1 tsp coconut oil
The dates and cashews already hold together, so the oil is largely for gloss and mouthfeel. Trade-off: slightly less silky and shiny, marginally firmer.
40 g desiccated coconut (for rolling) → 20 g cocoa powder for rolling
Rolling in cocoa instead of coconut saves fat and calories over the batch. Trade-off: a more bitter, less sweet coating — lean into the salt to balance it.
