No Brazilian birthday happens without them: condensed milk and cocoa stirred on the stove until the pan clears, then rolled into balls and covered in sprinkles. One pan, four ingredients, and the only skill is knowing when to stop stirring.

Put the condensed milk, sifted cocoa and butter in a heavy saucepan over medium-low heat and stir CONSTANTLY with a spatula, scraping the base. It will thicken slowly and then quickly.
12 min
It is done when you drag the spatula across the base and the mixture takes a full second to close the gap — about 12 minutes. Under-cooked it will not roll; over-cooked it goes chewy. Tip onto a greased plate and cool completely.

Butter your hands, roll teaspoons of the cooled mixture into balls and turn each one through the sprinkles. Makes about 24 — two each.

Want it lighter?
about 40 kcal less a serve, all swaps taken
These swaps lighten brigadeiros without stopping the mixture from setting — you still need the condensed milk and some butter for that classic pull-away-from-the-pan texture. Expect a slightly less glossy, marginally less sweet result, and be aware that a lighter condensed milk can make the mixture take a little…
395 g condensed milk (1 tin) → a 'light'/reduced-fat condensed milk (same 395 g tin)
Cuts fat and a little sugar while keeping the sweet, sticky base intact. The mixture may need a couple of extra minutes of stirring to reach the pan-clearing stage, and it sets slightly softer.
30 g butter → 15 g butter
Halving the butter keeps enough fat for the glossy roll-off texture but noticeably lightens each truffle. The result is a touch less rich and slightly firmer/less silky.
80 g chocolate sprinkles (for rolling) → 40 g dark chocolate sprinkles or 40 g cocoa nibs/unsweetened cocoa for dusting
Halving the coating and going darker cuts sugar and calories. A cocoa dusting is less sweet and less pretty than a full sprinkle coat, so it tastes more bittersweet than the original.
