A hearty Japanese cabbage pancake bound with a savoury flour batter, loaded with prawns, crisp bacon and egg, then finished with okonomiyaki sauce, Kewpie mayo and dancing bonito flakes. The flour batter carries the carbs, and the prawns, bacon and eggs push each serve well past 26 g of protein.

Add the shredded cabbage, spring onions and pickled ginger. Fold through until every strand is coated — it will look like more cabbage than batter, which is right.

Stir the chopped prawns evenly through the cabbage batter.

Heat 1/2 tbsp oil in a large non-stick frypan over medium heat. Lay a quarter of the bacon strips flat, then spoon a quarter of the batter over the top and press into a round pancake about 2 cm thick.
medium heat
Cook 5–6 minutes until the underside is golden and set, then flip carefully and cook another 5 minutes until cooked through and the prawns are opaque. Repeat with remaining oil, bacon and batter to make 4 pancakes.
Slide each pancake onto a plate. Drizzle with okonomiyaki sauce, zig-zag over the Kewpie mayo, then pile on the bonito flakes so they curl and dance in the heat. Serve hot.
