the water + the salt
Tip the frozen edamame pods straight into the boiling water and cook for 5–6 minutes, until the beans inside are tender and bright green. Drain well in a colander and give it a firm shake to shed excess water.
5–6 min, then drain
While the pods drain, have your flaky sea salt, chilli flakes, sesame oil and sesame seeds ready in a large mixing bowl.
salt, chilli, oil, sesame
Add the hot, drained pods to the bowl with the flaky salt, chilli flakes, sesame oil and sesame seeds. Toss well so the seasoning clings to the wet pods. Tip into a serving bowl and eat hot, squeezing the beans straight from the pod into your mouth (discard the empty pods).
