Combine the red wine, chicken broth and tomato paste in a pourable measuring cup and stir until smooth. Set aside.
In a heavy bottom pan over medium heat, render the chopped bacon until crisp, about 5 minutes. Use a slotted spoon to lift it out and set aside for garnish, leaving the fat in the pan.
5 min
Add the mushrooms and carrots to the bacon fat. Once the mushrooms release some liquid, about 3-4 minutes, add the onion and garlic and cook until aromatic, about 3-4 minutes more.
7 min
Lower the heat and sprinkle in the flour, stirring until all the vegetables are coated. Pour in the reserved wine mixture and bring to a boil, boiling 1-2 minutes to reduce.
2 min
Transfer everything from the pan into the slow cooker. Nestle the chicken thighs and drumsticks into the vegetables and sprinkle with salt and pepper. Set the rosemary, thyme and bay leaf on top.
Cover very tightly and cook on high for 4 hours or low for 8 hours, until the chicken is fork tender.
4 hr high
Place one chicken thigh and drumstick in each bowl and top with vegetables and broth. Sprinkle with the reserved bacon and chopped parsley.
