An easy Greek chicken gyro with a tender yogurt-lemon marinade — allow at least 30 minutes to marinate, overnight if you can. Eat it in a pita with all the fixings or serve it over a big salad.

In a large bowl combine the Greek yogurt, garlic, lemon zest and juice, salt, cumin, onion powder, paprika, turmeric, black pepper, cinnamon and red pepper flakes.
Add the chicken thighs and coat completely. Cover and refrigerate for at least 30 minutes, or up to overnight (do not go beyond 36 hours as the yogurt will begin to break down the chicken).
30 min+
Air fry the chicken thighs in an even single layer at 200°C for 20 to 24 minutes, flipping halfway, working in batches as needed. Alternatively, cook on an oiled skillet or grill over medium-high heat for 15 to 20 minutes, turning halfway.
When cooked through, transfer the chicken to a cutting board and slice into strips.
Shred the iceberg lettuce, thinly slice the red onion and slice the tomato ready for serving.
Build pita sandwiches or serve over salad with sliced chicken, about 1/2 cup shredded lettuce, onion, a slice of tomato and tzatziki, if desired.
