Paprika Chicken & Smokey White Bean Stew
Melina's version of a HelloFresh night that earned a permanent spot — golden smoked-paprika chicken thighs on a smokey white bean, capsicum and spinach stew, finished with fetta, pepitas and lemon. One pan, about half an hour.

Get prepped
PrepThinly slice the capsicum and onion. Cut the lemon into wedges. Drain and rinse the cannellini beans.
Coat the chicken
CoatTrim the chicken thighs. In a medium bowl, rub the chicken with the smoked paprika, the Green Salt Seasoning and a drizzle of olive oil until every piece is well coated.
Cook the chicken
PanHeat a large frying pan over medium-high heat. Cook the chicken thighs for 4–5 minutes each side, until golden and cooked through — no longer pink inside. Transfer to a plate and cover to keep warm.
Cook the beans
SimmerWipe out the pan and return it to medium heat with the olive oil. Cook the onion and capsicum, stirring occasionally, until softened, 4–5 minutes. Add the cannellini beans, passata and the water, and simmer until slightly thickened, 4–5 minutes. Stir in the baby spinach until wilted, 1–2 minutes. Season to taste.
