Thinly slice the capsicum and onion. Cut the lemon into wedges. Drain and rinse the cannellini beans.

Trim the chicken thighs. In a medium bowl, rub the chicken with the smoked paprika, the Green Salt Seasoning and a drizzle of olive oil until every piece is well coated.

Cook the chicken

Pan

Heat a large frying pan over medium-high heat. Cook the chicken thighs for 4–5 minutes each side, until golden and cooked through — no longer pink inside. Transfer to a plate and cover to keep warm.

Simmer

Wipe out the pan and return it to medium heat with the olive oil. Cook the onion and capsicum, stirring occasionally, until softened, 4–5 minutes. Add the cannellini beans, passata and the water, and simmer until slightly thickened, 4–5 minutes. Stir in the baby spinach until wilted, 1–2 minutes. Season to taste.
