Bring a large pot of salted water to a boil ready for the pasta.
Cut the chicken breasts into small 1cm cubes and season on both sides with the coarse salt and black pepper to taste.
Heat a very large frying pan over high heat. When hot, spray with oil and add half the chicken, cooking until browned on all sides and no longer pink, about 2 minutes. Transfer to a plate and repeat with the remaining chicken, then set aside and reduce the heat.

Add half a tablespoon of the butter to the frying pan and melt, then add the garlic and sauté until fragrant, about 1 minute. Pour in the white wine or broth, red pepper flakes and remaining salt. Cook, scraping up the bottom of the pan, until reduced by half, about 2 minutes. Add the tomatoes and cook 1 minute to soften.

Add the remaining 1½ tablespoons butter and let it melt, then stir in the lemon juice and remove the pan from the heat.
Add the pasta to the boiling water and cook to al dente per package directions. Reserve ½ cup pasta water, then drain.
Toss the drained pasta with the chicken and sauce, add the spinach and cook 1 minute, tossing, adding reserved pasta water as needed to coat. Finish with fresh parsley and serve with plenty of grated Parmesan.
