A low-carb copycat of the famous Crumbl cheesecake cookie, with a buttery almond-flour base topped with sugar-free cream cheese frosting and graham-style crumbs. Every bit as indulgent, but they won't spike your blood sugar.

About 285 kcal a serve — 6 g protein, 6 g carbs, 27 g fat. Each segment is that macro's share of the calories, within about 10%.

Preheat the oven to 165°C and line a large baking sheet with a silicone baking mat or baking paper. Use two sheets if yours are small so you don't crowd the cookies.
In a large bowl, whisk together the almond flour, brown sugar replacement, cinnamon, baking soda, and salt. Stir in the egg, melted butter, and vanilla until the dough comes together.
Roll the dough into 15 evenly sized balls, about 5 cm in diameter each. Place them 5 to 7 cm apart on the prepared cookie sheets.
Bake for 3 minutes, then remove and use a flat-bottomed glass and a piece of baking paper to press each cookie down to about 1 cm thick. This avoids cracked edges.
Return to the oven and bake another 12 to 15 minutes, until just barely firm to the touch. Remove and let cool completely on the pan. Set aside the largest cookie for the crumble.
In a large bowl, beat the cream cheese and butter together until smooth, with no other ingredients. Add the powdered sweetener and beat until well combined, then add the cream and vanilla and beat until smooth.
Transfer the frosting to a piping bag fitted with a round tip (or cut a 1 cm opening from the end of a disposable bag) and pipe a spiral onto 14 of the cooled cookies.
Crumble the reserved large cookie with your fingers into a small bowl, then sprinkle the crumbs over the frosted cookies. Chill until the topping is firm.
Want it lighter?
about 55 kcal less a serve, all swaps taken
This is already a keto bake, so the calories come mainly from fat (almond flour, butter, cream cheese, cream). A few swaps trim fat and richness without breaking the structure — but expect a slightly less buttery, less rich cookie.
113.5 g butter (melted) → 75 g butter (melted) plus 40 g unsweetened Greek yoghurt
Keeps enough fat for a workable dough but cuts overall fat and calories. The cookie base will be a touch softer and less crisp/buttery, and slightly more cakey.
141.75 g cream cheese (softened) → 90 g light (reduced-fat) cream cheese plus 50 g Greek yoghurt
Lightens the frosting significantly. Trade-off: the topping is a little less thick and tangy-rich, and slightly looser — chill it before spreading.
30.43 ml heavy whipping cream → 20 ml heavy cream
A small trim to the frosting fat. Barely noticeable in flavour, frosting is marginally less silky.
245 g almond flour → 200 g almond flour plus 25 g coconut flour
Coconut flour is more absorbent and lower in fat per gram, cutting some calories. Use only this ratio and don't add more coconut flour or the cookies turn dry and crumbly.
