Line an 8x8 inch square pan with parchment or wax paper and set aside.
Stir together the maple syrup, 1/3 cup peanut butter, water and vanilla until smooth.
Stir in the quick oats and salt until evenly combined into a crumbly mixture.
Transfer about two-thirds of the oat mixture to the pan and press down very well, using a second sheet of parchment to press it evenly into the bottom of the pan as hard as you can. Remove the top sheet.
In a separate bowl, carefully melt the chocolate chips, then stir in the peanut butter until smooth.
Pour the chocolate fudge evenly over the crust in the pan. Sprinkle the remaining oat crumbles on top of the chocolate layer, then press down firmly with a fork or spoon.
Refrigerate or freeze until firm enough to cut into squares.
Want it lighter?
about 45 kcal less a serve, all swaps taken
These swaps make the bars lighter and less rich, but be honest: they'll be a touch less fudgy and slightly less sweet. The fudge layer especially depends on peanut butter and chocolate for its smooth set, so reducing them makes it firmer and thinner rather than gooey.
0.5 cup peanut butter (additional) → 0.33 cup peanut butter plus 3 tbsp plain non-fat Greek yoghurt
Cuts a big chunk of fat from the richest layer. The fudge sets softer and a little less dense — still smooth but noticeably less rich and slightly tangy.
140 g chocolate chips (dark or semi-sweet) → 110 g 70% dark chocolate, chopped
Less total chocolate and a higher-cocoa bar means less sugar per gram. Result is more intensely dark and less sweet — reduce if your crowd likes milk-sweet bars.
0.5 cup pure maple syrup → 0.33 cup pure maple syrup
Removes added sugar and some liquid. The oat crust will be a bit drier and hold together less tightly, so press firmly; add 1 tbsp water if it won't clump.
