Inspired by a recipe from All Day I Dream About Food ↗
About 185 kcal a serve — 4 g protein, 5 g carbs, 17 g fat. Each segment is that macro's share of the calories, within about 10%.

Line a 9x5 inch loaf pan with waxed paper or parchment paper so the fudge lifts out easily once set.
In a medium saucepan over medium heat, bring the heavy cream, almond milk, powdered sweetener, allulose and butter to a low boil. Reduce the heat and simmer 20 to 30 minutes, until the mixture has thickened and reduced by about one third.
20–30 min
Remove the pan from the heat and add the chopped unsweetened chocolate. Let it stand for 5 minutes until melted, then whisk until well combined and smooth.
5 min
Whisk in the collagen peptides, cocoa powder, vanilla extract and salt until the mixture is completely smooth.
Spread the mixture into the prepared loaf pan, sprinkle with sea salt or chopped nuts if desired, and chill for about 6 hours until firm. Cut into squares to serve.

Want it lighter?
about 45 kcal less a serve, all swaps taken
This is already a low-carb fudge, so the calories are almost entirely from fat (cream, butter, unsweetened chocolate). The only honest way to lighten it is to trim fat and portion the richest components. Expect a slightly less silky, less fudgy set with these swaps.
315 ml heavy whipping cream → 200 ml heavy whipping cream plus 115 ml unsweetened almond milk
Replacing about a third of the cream with almond milk cuts a big chunk of fat and calories. The trade-off is a noticeably less rich, less creamy mouthfeel and a slightly softer, less luxurious set.
2 tbsp butter → 1 tbsp butter plus 1 tbsp plain Greek yoghurt
Halving the added butter and adding yoghurt keeps some fat for structure while lowering calories. The fudge will be a touch tangier and slightly less smooth.
142 g unsweetened chocolate → 115 g unsweetened chocolate plus an extra 1 tbsp cocoa powder
Cutting the solid chocolate reduces cocoa butter (fat) while the extra cocoa keeps the chocolate intensity. Result is a firmer, drier, less melt-in-the-mouth fudge that is a bit less fudgy.
