Line a large baking sheet with parchment paper so the cookies won't stick when you scoop them.
In a medium saucepan, melt the coconut oil over medium heat until fully liquid.
Add the maple syrup, almond milk, cocoa powder, peanut butter, and vanilla to the saucepan and whisk to combine into a smooth glossy mixture. If your peanut butter is unsalted, stir in a few pinches of salt.
Bring the mixture to a rolling boil and cook, stirring often, for exactly 2 minutes. Don't boil longer or it will become too thick. Remove the pan from the heat.
Stir the rolled oats into the chocolate mixture until they are all thoroughly coated.
Use a 2-tablespoon cookie scoop to dollop the batter onto the prepared baking sheet, spacing them apart.
Transfer the sheet to the refrigerator and chill for 30 minutes, until the cookies are firm. Then serve.

Since there's no baking, you have room to swap fat and sugar without breaking structure — but expect a slightly less rich, less sweet, and marginally softer set. The oats provide…
60 ml coconut oil → 30 ml coconut oil plus 40 g unsweetened applesauce or mashed banana
Halving the coconut oil removes a lot of fat and calories. Some fat is still needed to help the cookies firm up, so don't cut it entirely. Result: less rich and slightly softer/stickier set, a touch…
125 ml maple syrup → 90 ml maple syrup
Cutting the syrup by about a third noticeably reduces sugar and calories. The cookies will be less sweet and set a little less firmly since syrup helps bind. Taste the mix and add a pinch more…
90 g creamy peanut butter (runny) → 70 g creamy peanut butter (runny)
Slightly reducing peanut butter lowers fat and calories while keeping plenty of flavour. Result: a touch less rich and creamy, and the mix may be marginally drier — add a splash more almond milk if…
