Blended black beans stand in for flour in these dense, fudgy chocolate brownies, which bake rich and smooth with no trace of the beans in the texture.

Preheat your oven to 175°C and grease an 8x8 inch (20x20cm) baking pan.
Combine the black beans, cocoa powder, quick oats, salt, maple syrup, sugar, coconut oil, vanilla and baking powder in a good food processor. Blend until completely smooth — really blend well for the best texture.
Stir the chocolate chips through the smooth batter by hand.
Pour the batter into the greased pan and smooth the top. Optionally sprinkle extra chocolate chips over the surface for presentation.
Bake the brownies for 15–18 minutes. The centre may still look a bit soft, which is fine for fudgy brownies.
Let the brownies cool at least 10 minutes before cutting. If they still look undercooked, chill them in the fridge overnight and they will magically firm up.
Want it lighter?
about 25 kcal less a serve, all swaps taken
These brownies are already fairly light thanks to the black bean base, but you can trim fat and sugar further. Expect a slightly less rich, less sweet result — still fudgy from the beans, but the reduced coconut oil and chocolate will make them a touch less decadent and glossy on top.
40 g coconut oil → 20 g coconut oil plus 30 g unsweetened applesauce or mashed banana
Keeps enough fat for structure and moisture while cutting saturated fat and calories. The crumb will be a little softer and less rich, and banana will add a faint fruity note.
2 tbsp sugar → omit the sugar and add 10 g extra maple syrup
Removes refined sugar; net sugar drops slightly. Brownies will be a touch less sweet — taste the batter and add a pinch of stevia if needed.
100 g chocolate chips → 70 g dark chocolate chips (70%+)
Less added sugar and slightly fewer calories, plus a deeper chocolate flavour. Fewer molten pockets means marginally less gooey; keep a few for the topping so they still look indulgent.
