In a medium bowl, whip the chilled heavy cream until it holds stiff peaks. Set aside.
In another medium bowl, beat together the cream cheese and peanut butter until smooth and creamy. Add the sweetener, vanilla and a pinch of salt if your peanut butter is unsalted, then beat until smooth.
If your mixture is overly thick, add about 2 tbsp heavy cream to lighten it and beat until combined.
Gently fold the whipped cream into the peanut butter mixture until no streaks remain.
Spoon or pipe the mousse into four small dessert glasses (about 4 ounces each). Drizzle with a little low carb chocolate sauce if desired.
Want it lighter?
about 95 kcal less a serve, all swaps taken
This is an already low-carb, no-bake mousse where nearly all the calories come from the cream, cream cheese and peanut butter fat. To lighten it you have to trim some of that fat and richness — the result will be a bit less dense and less luxuriously creamy, but still pleasant.
125 ml heavy whipping cream → 75 ml heavy whipping cream whipped, folded with 60 g plain Greek yoghurt (0-2% fat)
Cuts a big chunk of fat while keeping some whipped body. The mousse will be looser and slightly tangy rather than richly creamy, and holds its shape less well.
120 g cream cheese → 120 g light/reduced-fat cream cheese
Keeps the same structure and cheesecake flavour but lowers fat. Texture is marginally softer and less rich.
60 g natural peanut butter → 45 g natural peanut butter plus 1 tbsp powdered peanut flour (PB2-style) mixed with a…
Keeps strong peanut flavour with less fat and calories. Slightly less smooth and a touch drier on the tongue.
60 g powdered Swerve sweetener → 40 g powdered Swerve sweetener
Reduces cloying sweetness with no calorie change (it's a sugar alcohol) but the mousse will taste noticeably less sweet, which pairs well with the tangy yoghurt.
