Line a baking sheet with parchment paper and set aside.
In a medium bowl, stir together the peanut butter, maple syrup, melted coconut oil, vanilla, and salt until smooth.
Add the oats and chocolate chips and stir until combined into a cohesive dough.
Use a 2-tablespoon cookie scoop to portion the dough. Form into balls with your hands and place on the baking sheet, then flatten into disks with your fingers (they become more cohesive as they chill).
Transfer the tray to the fridge and chill overnight to allow the cookies to firm up. The next day they're ready to eat.

about 32 kcal less a serve, all swaps taken
These no-bake cookies get most of their calories from peanut butter, maple syrup and coconut oil. You can trim all three without stopping them from setting, since the oats and remaining peanut butter still bind everything. Expect a slightly less sweet, less rich result that's a touch firmer and less glossy.
170 g unsalted natural creamy peanut butter → 120 g peanut butter plus 50 g unsweetened apple or banana puree
Cuts a chunk of fat while keeping the nutty flavour and enough binding. Cookies will be a little softer and slightly less rich; use banana if you want to help make up for lost sweetness.
125 ml maple syrup → 90 ml maple syrup
Reduces added sugar noticeably. The cookies will be less sweet and set marginally softer, so chill them well before eating.
2 tbsp coconut oil (melted) → 1 tbsp coconut oil (melted)
Keeps enough fat for the mixture to firm up in the fridge but lowers calories. They'll be slightly less fudgy and a touch more crumbly.
45 g mini chocolate chips → 30 g chopped dark chocolate (70%+)
Less sugar and a more intense chocolate hit for less quantity. Slightly less sweet, with pockets of stronger cocoa flavour.
