Heat a heavy-bottomed pot over medium-low heat and spray with oil. Pinch the sausage into mini meatballs, add them and stir minimally so they caramelise. Once cooked through, remove from the pot and reserve.
Add the roma tomatoes flesh side down, then pile the sliced onion and smashed garlic on top of the tomatoes. Let everything caramelise untouched for 4-5 minutes.
4-5 min
Pour in the chicken bone broth, reduce the heat to low, cover and simmer until the vegetables have softened and the liquid has reduced slightly, about 25-30 minutes.
25-30 min
Remove the pot from the heat, add the half and half and blend with an immersion blender until smooth.
Return the pot to a low simmer. Add the mini ravioli, then return the sausage and stir in the spinach and Parmesan. Simmer until the pasta is cooked according to the package directions and the soup is warmed through.
Ladle into bowls and sprinkle with extra grated Parmesan before eating.
