About 265 kcal a serve — 8 g protein, 14 g carbs, 21 g fat. Each segment is that macro's share of the calories, within about 10%.

Preheat your oven to 135°C (275°F). Place the almonds, pecans, sunflower seeds, pumpkin seeds, and cashews into a food processor and pulse until chopped to a medium texture. Alternatively, roughly chop them with a knife.
Place the chopped nuts and seeds into a large mixing bowl. Add the cinnamon, ginger, cardamom, allspice, molasses, honey, and vanilla extract. Stir together thoroughly until everything is well-coated.
Line two baking sheets with parchment paper. Divide the granola mix evenly between the two pans in a single, flat layer.
Bake for 10 minutes, then remove the sheet pans and stir the granola. Rotate the pans when you return them to the oven and bake for a further 10 to 15 minutes, being careful not to burn it.
It won't look any different when done and will still be soft — that's fine, it hardens as it cools. Remove from the oven and let cool for at least 30 minutes.
