Fudgy vegan brownies built on tahini, chickpea flour and Medjool dates — rich, dark and naturally sweet, with a genuine protein hit from the sesame and legume flour.

Preheat the oven to 175°C. Line a 20 cm square tin with baking paper.
Put the pitted dates, tahini, maple syrup, soy milk and vanilla in a bowl. Mash and stir hard with a fork until you have a thick, mostly smooth paste — small flecks of date are fine.
Sift in the chickpea flour, cocoa, baking powder and salt. Fold through until fully combined into a stiff, glossy batter, then stir in the walnuts.
Scrape the batter into the lined tin and smooth flat. Bake for 22–25 minutes until the top is set but the centre still feels slightly soft. Cool fully in the tin before cutting into 4 squares — they firm up as they cool.
Want it lighter?
about 95 kcal less a serve, all swaps taken
These swaps keep the fudgy date-and-tahini base intact while trimming added sugar and some fat. Expect brownies that are slightly less sweet and a touch less rich, but still moist thanks to the dates.
60 ml Maple syrup → 30 ml maple syrup plus 20 ml extra soy milk
Halves the added sugar. The dates still carry plenty of natural sweetness, but the batch will taste noticeably less sweet and marginally less glossy — bump vanilla slightly to compensate.
150 g Hulled tahini → 100 g tahini plus 60 g unsweetened applesauce
Cuts a big chunk of fat by swapping a third of the tahini for fruit puree. Still enough tahini for the sesame flavour and structure, but the crumb ends up a little cakier and less densely fudgy.
40 g Walnuts → 25 g walnuts
Smaller amount of the richest add-in. Slightly less crunch and fat, but the toasty flavour still comes through.
